Ingredients (makes 12 cupcakes):
- 1 ¼ cups all-purpose flour
- 1 ¼ tsp baking powder
- ¼ tsp salt
- ¾ cup sugar
- 6 tbsp unsalted butter, at room temperature
- 2 eggs
- 1 tsp vanilla extract
- 1/3 cup milk
Directions:
Preheat oven to 350ºF. Mix flour, baking powder, and salt. In another bowl beat butter and sugar together until light and fluffy, about 2 minutes. Add eggs and vanilla. Beat until combined. Add flour mixture in 3 additions, alternating with milk in 2 additions. Mix until combined.
Fill cupcake liners about ¾ full. Bake 18-20 minutes or until an inserted toothpick comes out clean. Cupcakes should be light golden brown. Cupcakes need to be completely cooled before frosting.
