Vanilla cupcakes

Ingredients (makes 12 cupcakes):

  • 1 ¼ cups all-purpose flour
  • 1 ½ cups baking powder
  • ¼ tsp salt
  • ¾ cup sugar
  • 6 tbsp unsalted butter, at room temperature
  • 1 large egg
  • 1 large egg white
  • 1 tsp vanilla extract
  • ½ cup milk

Directions:
Preheat oven to 350ºF.
Whisk together the flour, baking powder, and salt. In a different bowl beat the sugar and butter together until light and fluffy, about 2-3 minutes. Add the egg and egg white one at a time, then beat in the vanilla. Add the flour mixture in 3 additions, alternating with the milk in 2 additions, beating until just combined.
Fill lined muffin cups about 3/4th full. Bake 18-20 minutes or until an inserted toothpick comes out clean. Cupcakes should be light golden brown. Let cupcakes cool completely before frosting.
