Happy Easter! Here is a cute idea for Easter nests cupcakes, which I made for my daughter’s preschool class. First, I wanted to bake Yellow Cupcakes (see the Recipes page for instructions). Then my daughter had a special request: she wanted to have cupcakes like “Pinkalicious” from the book by Victoria and Elizabeth Kann. Ok, in went some pink food coloring. And because we like color so much, I decided to make green icing, which resembles the grass for the nest. I used a icing pipe with a round tip and swirled the icing on the cupcakes. In the middle of my cupcake nests I placed several speckled Jelly Beans, which looked just like little bird eggs. Since I made the cupcakes for little kids, I avoided the hard candy eggs and found a great alternative in the soft Jelly Beans.
