
Barbie cake
My daughter’s 4th birthday was coming up and my big question was: What kind of cake should I make? For my daughter the answer was very easy: a princess cake. Ok, I thought, but how do I do that? After getting the cake at the local bakery for the last years we always ended up with a delicious cake, but the design was never what I asked for. So I decided to give it a try and bake a birthday cake myself. And here is how I did it:
- I used a Bundt cake pan and a 9” round cake pan. Bake one (1) Bundt cake and two (2) round cakes with any recipe you like. I baked a Butter Bundt cake, one vanilla and one chocolate round cake. Let the cakes cool completely and cut of any dome on top or bottom to make the cakes even.
- You can use any Barbie doll. My daughter chose a Sleeping Beauty doll which works just fine.
- Take off the doll’s clothes and wrap her body in clear wrap. Put her hair in an up-do, if necessary.
- Mix a generous amount of regular icing. See “Recipes” for ideas. Add any food color to the icing if needed. For this princess cake I added pink food color to about ¾ of the icing.
- For the filling between layers I used vanilla pudding. Mix 2 packets of instant vanilla pudding and wait until hardened. You can also use icing as a filler.
- Take a sharp knife and cut a hole in the middle of the round cakes, where the doll will be placed.
- Place one round cake on the bottom and cover the top with pudding. Do not use too much, since it will come out on the sides. Place the other round cake on top and cover the top with pudding. Place the Bundt cake on top. Trim edges if necessary, so the cake is even all around.
- Take the wrapped doll and stick it in the middle of the cake. To stabilize the doll I filled the remaining hole with pudding.
- With a spatula cover the cake with a generous amount of icing all around. No part of the cake or pudding should be visible. Even out the icing as much as possible.
- For the decoration I used an icing pipe with a star tip. (Witon’s tip No. 1M works great.)
- Fill the pipe with icing. Place the tip on the cake, push icing out. When the flower is big enough, release pressure and remove tip from cake. Decorate the cake with as many flowers as you wish.
- For the doll’s top use a small round tip (I used Wilton’s filling tip No. 230, which did the job well). Fill the pipe with icing and dot the icing all over the doll’s top to make a shirt.
- For the finish I dusted the whole cake with shimmer dust (Wilton has a variety of colors).
