I recently went through all of my pictures and came across my daughter’s 5th birthday cake. And I remembered that I actually never posted this cake on my website. It was probably forgotten for a reason: I was not too happy with how it turned out, but everybody else at the party loved it. Most important, my daughter was happy about her ballerina cake.
After almost a year and several fondant cakes later I would like to share this cake with you, because it shows a learning process. It is such a great example of how much you can learn in cake decorating to make your cakes look beautiful.
This ballerina cake was my first fondant cake ever. I just watched some brief video online to have an idea of how to work with fondant, but I clearly had no clue. I also made the Marshmallow fondant myself which was a challenge the first time around. This process got a lot easier after making many batches of fondant and getting used to the sticky consistency. You just figure out tricks while you are working with it.
The cake itself is a four layer cake with two layers of vanilla and two layers of chocolate cake. In between is simple buttercream icing.
After stacking all the cake layers I cut a wavy pattern into the top layer to make the tutu look more natural and give it some movement. I then inserted the ballerina Barbie, dirt iced and iced the cake.
I was happy how it tasted, but the fondant decorations certainly needed improvement. While covering the cake, the fondant ripped apart and I struggled to cover up the tears. In the picture that becomes very obvious. Now I am also aware that the fondant was way too dry.
I am happy that I took the Wilton classes, which taught me how to work with fondant properly. During the past year I made several fondant cakes and I am proud of the improvement.
I know that the following birthday cake for my older daughter, whatever theme she will chose this time, will be much more professional and neat looking than the last.
